There is a nice little thread running on the forums about favorite holiday recipes. I thought I would post some of them here of the blog. Let us know what your favorite holiday recipe (it would be super great if you sent a picture too). Maybe we could even make some t-shirts with recipes on them.
I thought I would start with this recipe for Buckeye Cookies from Linny (Check out Linny’s Spreadshirt shop - Duckpuddle). Buckeyes are one of my favorite and no one has made them for me in years.
Buckeye cookies (this is a family favorite and it seems that i can never make enough to last)
2 lbs. peanut butter
1 lb. butter
3 lbs powered sugar
2 12 oz. packages of semi sweet chocolate chips (use a high quality chocolate)
1/2 of one bar of paraffin wax
toothpics for dipping
waxed paperPlace wax paper onto cookie sheet and set aside. Cream peanut butter and butter until combined. Add sugar a little at a time. make sure it is mixed well. Roll peanut butter mixture into approximately 400 1 inch diameter balls. insert one tooth pic into each small peanut butter ball. set all of them aside. Melt chocolate and paraffin wax (paraffin wax helps the chocolate become shiny when it cools) in a double boiler. Be careful not to over heat the chocolate. Dip the ball into the chocolate so as to almost cover the entire ball. Leave small portion of ball un-coated. Let cool on waxed paper. store in a cool place
*** if you dont have a double boiler then just get a pot fill with a little water then put another pot on top that pot then it would work as a double boiler)
This recipe makes 400 cookies. Halve or quarter the recipe if you cant eat that many
